Producer notes:
Zelli Pasta is a family owned and run pasta shop in Northwest Arkansas. We source, produce, package, and fulfill every box of Zelli Pasta out of our pasta shop. We use 100% All Organic Durum Semolina flour that is grown and milled in North America.

Our grains are milled to order, and we never keep a large supply of grains on hand in order to ensure that our pasta is made with recently milled grains. We use Italian made bronze dies. We extrude and dry our pasta at low temperatures. Our pasta dries for a minimum of 18 hours and some shapes up to 36 hours. You will see that our pasta retains the pale color of the grains! Slow drying and extruding at low temperatures means that our pasta retains the good nutrients from the grains, which makes our pasta easier to digest.

Pasta is good for the soul, and we want our ingredients to reflect that!
