Piebird is a scratch pastry kitchen in Lawrenceville, run by industry vet and pie expert Annalee DePaoli. Named after the piebird, a tool used to vent pies as they bake, Piebird has been a staple in the community for almost seven years. Each pie is built on Annalee’s special — secret — crust recipe, one that uses only butter (no shortening) to keep the pastry extra-flaky.
