## What’s in the meal deal

- Whole chicken, Locust Point Farms

- 5lb bag Potatoes, Central PA (you'll have extra!)

- 1.5lbs Carrots, Central PA Produce Coop, Tyrone, PA (you'll have extra!)

- 2 sweet onions

- 1 head garlic

- 1 lemon

- 1 bunch kale

## Directions

Step 0: Defrost the chicken

If your chicken is frozen, move it to the fridge 24 to 48 hours before cooking.

Short on time, sealed bag in cold water, change water every 30 minutes, about 1 to 3 hours depending on size.

Do not thaw on the counter.

1) Heat the oven

Set oven to 425°F.

Put a sheet pan in the oven while it heats (helps the veg brown).

2) Prep the veg

Potatoes: halve if small, quarter if bigger.

Carrots: cut into 2 to 3 inch pieces.

Onion: cut into wedges.

Garlic: smash 4 to 6 cloves.

Toss everything with 2 to 3 tbsp oil, 1 to 1.5 tsp salt, and pepper.

3) Start roasting the veg

Carefully pull the hot sheet pan out.

Spread veg in a single layer.

Roast 20 minutes.

4) Prep the chicken

Pat chicken very dry with paper towels.

Season all over with 1.5 to 2 tsp salt plus pepper.

Optional but great: rub with a little oil or butter, add lemon zest, tuck lemon halves and a couple garlic cloves in the cavity.

5) Roast chicken + veg

Nestle chicken on the pan (or on top of the veg).

Roast at least 60 minutes, until the thickest part of the thigh hits 165°F.

If you have a thermometer, use it. It’s the cheat code.

6) Rest

Move chicken to a cutting board.

Rest 10 to 15 minutes.

7) Finish and serve

Squeeze fresh lemon over chicken and veg.

Optional butter move for the carrots: toss hot carrots with 1 to 2 tbsp butter and a pinch of salt.

Leftovers

Pull remaining meat for sandwiches or salads.

Save bones and scraps for stock.
