**Cooking ideas**
- **Pan sear**: Salt and pepper. Hot skillet. 3 to 4 minutes per side. Finish with butter, garlic, herbs.
- **Grill**: Medium heat. 4 to 5 minutes per side. Rest 5 minutes.
- **Sheet pan**: Toss with apples and onions. Roast at 425°F for 15 to 18 minutes.
