Bolognese Sauce
Inspired while traveling through the countryside of Umbria. Somewhere in between Todi and Orvieto. This culinary marvel is in a class of its own. Beef, pork, and veal trimmings are house ground and rendered. Bloomed with fresh farm milk and white wine from the region. A mirepoix of onions, celery and carrots and herbs are then sweated in. The sauce is then simmered for hours before it is sent to the canning room.

Founded in 1997 by David Ayn as a companion to his acclaimed Davio in Beechview, Alla Famiglia began as an intimate eight-table Italian restaurant before being purchased in 2005 by chef Jonathan Vlasic, whose formal culinary training and family roots in Roman and Emilia traditions shaped its evolution into a destination known for disciplined technique, creativity, and a passion for excellence.
