Grass-fed Whole Milk, Cream-top Milk Pint
Twin Brook Dairy uses a slower, low temperature vat pasteurization to ensure that their milk retains the majority of it’s enzymes, which are important for proper digestion. They do not homogenize the milk so the flavorful cream (produced abundantly by their brown cows) will rise to the top. Just give your bottle a good shake to reincorporate the cream back into the milk.
You may notice that this incredible milk has a yellow tinge. Twin Brook’s Guernsey cows (very rare in the US) naturally produce milk that is higher in beta carotene which gives the milk a creamy yellow hue. Guernsey and Jersey cows also naturally produce more cream, vitamin D and vitamin A so this special milk is loaded with nutrition.
