Roast the potatoes, sauté the beans with onion and garlic, and finish with a squeeze of lemon over the pork chops. Dinner handled.

What’s in it:

- 2 Thoma pork chops
- 1lb Green beans
- 4 Yukon gold potatoes
- 1 onion
- 1 head Garlic
- 1 lemon

Good for:

2 people

Why it works:

Simple ingredients. Real dinner. Very little fuss.

## Cooking Instructions

**You’ll need from your kitchen:**
- Oil or butter
- Salt
- Black pepper

**Optional, not in the box:**
- Rosemary or thyme
- Red pepper flakes
- Dijon mustard

### 1. Heat the oven
Preheat oven to **425°F**.

### 2. Roast the potatoes
Wash the Yukon gold potatoes and cut into chunks or wedges.

Toss with:
- 1 to 2 tablespoons oil
- Salt
- Black pepper

Optional:
- A few smashed garlic cloves
- Chopped rosemary or thyme

Spread on a sheet pan and roast for **20-25 minutes**.

### 3. Prep the pork chops
Pat the pork chops dry and season both sides with salt and pepper.

Optional:
- Add a little chopped rosemary or thyme

### 4. Prep the vegetables
Trim the green beans.

Thinly slice the onion.

Mince or slice a few cloves of garlic.

Cut the lemon in half. Save one half for squeezing at the end. Cut the other half into wedges if you'd like to serve it on the plate.

### 5. Cook the pork chops
After the potatoes have roasted for 20-25 minutes, add the pork chops to the pan, or place them on a second pan with a little oil.

Roast for **15 to 20 minutes more**, depending on thickness, until cooked through.

If you have a thermometer, pull them at **140 to 145°F** and let them rest before serving.

### 6. Cook the green beans
While the pork and potatoes finish, heat a skillet over medium heat.

Add a little oil or butter, then cook the onion for **4 to 5 minutes** until softened.

Add the garlic and cook for **30 seconds**.

Add the green beans, salt, and pepper. Cook for **5 to 7 minutes** until tender and bright green.

Finish with a squeeze of lemon juice.

Optional:
- Add red pepper flakes
- Add a spoonful of butter for a richer finish

### 7. Rest and serve
Let the pork chops rest for **5 minutes**.

Serve with the roasted potatoes and green beans.

Finish with extra lemon over the pork chops and vegetables.
